Be Prepared to Be Dazzled By Cuteness!

The really good giggling happens at the end, so make sure you watch it all the way through. It's been about a week since this started - Clay will laugh hysterically while being undressed and then anywhere you tickle him on his belly will really get to him. It's pretty much the cutest thing in the world. Clayton is about 3 months and one week old at the time of this video. (Taken yesterday.)

WHAT?!

It's snowing in Virginia, but not in Utah?! What the crap is that about?

And here is the proof. This lovely lady is my cousin Laura in Northern Virginia. My Aunt Shauna sent this pic via text to my Mom today. It's supposed to snow here in Logan all this weekend, so perhaps we will be able to send them pictures that will beat this one!!

Reminiscing

Reading Lindsey's blurb about me and Cristin made me remember all the good times we had the second semester of our Freshman year at Utah State University. And then I found this picture on my computer:



Those little dots that the arrows are pointing to are dead box elder bugs. We had an infestation that year. This picture was taken above my window in my dorm room. I would reach up there with a flip-flop and smash them and then be too grossed out to clean them off the wall. So they stayed there until I moved out - I never cleaned them up. I don't think I really need to explain how their names came about - okay, okay - box elder bugs are a type of beetle and there happened to be 4 of them so they got named after The Beatles. Are you happy now? :-)

Hold Me Tight

Well yesterday Jer, Clay and I all went over to Cristin and Mark's house and made that delicious cracker candy. (We had to make it sooner than planned because Cristin ended up going visiting teaching today.) Before we made the candy, however, we went over to Michaels to get some decorative boxes to put our tasty treats in. We ended up getting those awesome chinese take-out boxes with many different holiday designs on them. (Thanks for the tip, Lin!) Anyway, we took Clayton with us because Jer was busy writing a paper and Mark doesn't watch babies. It was about 9pm and Clay was getting tired, but he has a hard time falling asleep by himself. Thankfully, I have a few secret weapons - the best one being a song from "Across the Universe" that he loves to hear. It's called "Hold Me Tight". Did I mention that the louder you sing it the better he likes it? So, that's what I did all down the aisles of Michaels in search of the holiday chinese take-out boxes. It was for a good cause, though. And it worked! Fussy little Clay was able to relax and fall asleep in his car seat as I sang to him. Oh how little embarrasses me now that I'm a mom!!

This is an SNL digital short that I happened to catch one night when I was up with Clay. Bon Jovi was the host that night, so I figured it would be a good episode, but when I saw this I was in tears I laughed so hard!

Recipe

So, my Mom is in a recipe club and last week they had a meeting at her house and the next day Cristin and I were forced to try one of the items that was made. We were a little hesitant at first, but it was quite delectable! Cris and I are going to make it for relatives for Christmas this weekend and I thought I would share the recipe with ya'll. We're going to throw it in some decorative tins and give it as gifts. Cristin actually posted it on her blog too, but I'll add it as well!

Cracker Candy

What you need....
Saltine crackers
2 sticks of butter
1 cup brown sugar
1 12 oz package of semi-sweet chocolate chips
1 cup chopped pecans (or any other nut you prefer)

Directions...Preheat oven to 400 degrees. Line a cookie sheet (one with a lip) with aluminum foil. Place saltine crackers side by side to fill up cookie sheet (may have to break a few to fill in the holes) Meanwhile, melt butter and brown sugar over medium heat on stove. When mixture begins to boil, continue boiling for three minutes on medium heat. DO NOT STIR!
Remove from heat and pour this mixture evenly over the crackers. Place in pre-heated 400 degree oven for 7 minutes. Remove from oven, and sprinkle chocolate chips evenly over sugar/butter mixture. Place back in oven for 1-2 minutes to allow chips to melt. Spread melted chips evenly to edges, covering all portions of the crackers. Sprinkle chopped pecans over top. Place in freezer until hard. Remove and break into pieces & enjoy!! Be sure to store in an airtight container.
